Party Canapé Recipes

The party season is upon us and we have two canapés, fitting for summer and all ages.

A light and summery canapé the grown-ups will be sure to enjoy! Using fresh ingredients while combining tangy, sweet and creamy key note flavours, this is the perfect bite to eat to get the party of the season started.

Ingredients:

10 Wonton pastry squares
2 Cups Canola oil
10 Fresh peeled prawns
2 Avocadoes
6 Tbsp. Cup Sour cream
1 Tbsp. Lime juice
½ Cup Whole egg mayonnaise
6 Tbsp. Sweet chilli
Coriander sprigs for garnish

Method:

  1. Heat the canola oil in a deep-dish pan.
  2. Fry wonton pastry squares until golden brown.
  3. Meanwhile crush avocado until just mashed, lightly fold in sour cream, add lime juice and season.
  4. Combine mayonnaise and sweet chili.
  5. To assemble, arrange fried wonton squares, add a dollop of the avocado mixture, prawn, drizzle dressing and garnish with coriander sprigs

 


Marshmallow bites

This canapé is perfect for the little ones. It’s fun, tasty and a sweet addition to any kids party. The best thing about these is they can be cut into different shapes and sizes. I like these in bite-sized square pieces with a drizzle of chocolate and dusting of coconut.

Ingredients:

2 Cups pink and white marshmallows
80g Unsalted butter
1 Cup Roughly chopped marshmallows
6 Cups Rice puffs
½ Cup Craisins
½ Cup Flaked almonds
½ Cup Dark chocolate
32g Unsalted butter
4Og Desiccated coconut

Method:

  1. Melt 2 cups of marshmallows and 80g butter in a saucepan.
  2. Stir in melted marshmallow mixture, rice puffs, craisins and flaked almonds and chopped marshmallows.
  3. Press mixture into a lined square cake tin and refrigerate for 3 hours.
  4. Remove the bar from cake tin and cut into bite sized squares.
  5. Melt dark chocolate and 20g butter a bain-marie, before adding into a piping bag.
  6. Drizzle melted chocolate over cut bars and dust with desiccated coconut.

With the festive season right around the corner, what better time than now to begin party planning. Whether it be for a iChristmas party or end of the year ‘do’ you’ll want to explore a range of options to make it fun along the way.

Party planning needn’t be stressful. By staying organised and starting early, you’re able to create, host and set an experience most memorable for your guests. Here are some tips to help you on your way to entertain with ease.

1.  The guest list is key. Start by gathering a list of names and set the RSVP date  Dietary requirements are a must these days with vegetarian and gluten free being the two most common in crowds. We have a range of items in our menus that cater for allergies or intolerances, as you’ll want to make sure your guests are able to enjoy the food and have a great time!

2. Choosing the perfect location can have a great impact on the theme of your event. Your venue is a blank canvas when it comes to creating the perfect layout. Keep it simple with one centralised theme and work around it. Highlight colour schemes or follow one focal feature that will tie in the party together.

3. Food matters, as with any type of party, you will want to fill your guests with delicious food that looks just as well. Selecting your menu whether it be a cocktail party with staff on hand or simply a drop-off for your guests to help themselves to, the possibilities are endless. Check out our menu options available here

Fig & Lime Catering’s Tasting Night 2017

What a succesful event. Our Tasting Night was just as delicious as we imagined it to be!

Embarking on the food journey, we started with a spectacular grazing table, abundantly filled with cheese and antipasto, before sampling an array of canapés, that were: Prawn betel leaf bites, Lemongrass beef rice paper rolls, Peking duck, Mini antipasto skewers, Spiced lamb kofta meat balls, Pulled beef sliders, Mini chicken & mayonnaise sandwiches, Mini ricotta rocket and sundried tomato sandwiches before finishing off with Vanilla bean pannacotta and raspberry coulis.

Congratulations to our lucky draw prize winners, Donna Etchells of McGrath Estate Agents on winning a bottle Moët & Chandon and Kara Whittingham of Proactive App Solutions for winning a $100.00 voucher!

Ryan Cowie Benefit Night

A great night, for a great cause. We were privileged to cater for an event that would make a difference to the lives of the Cowie family, particularly for young Ryan. An outpouring of support came from members of Hope Church 2508 and the extended community, as many gathered to raise funds and celebrate the life of dearly beloved Cat Cowie.

Guests enjoyed a full three-course Canapé meal, ranging from our Package B and new Dessert selections. Rest assured, every guest left with satisfied bellies as we had plenty of food on hand.

We would like to thank Pastor Lionel & Briga Rattenbury and their team who poured tirelessly into making this event happen. The atmosphere of the night was a reflection on the kind and giving spirit of the community. We feel genuinely blessed to have been a part of this.

John & Kaye’s Wedding

We were extremely privileged to cater for John & Kaye’s beautiful wedding. A lovely sight it was to see bride and groom, sharing this momentous occasion with 70 of their closest family and friends at ‘The Bellmore’, Bundanoon on Saturday Night.

We marked the reception, starting with an array of our delicious entrees: Golden Seafood Spring Rolls w/ Plum Sauce, Cripsy Hand-Crumbed Fish Strips w/ Wasabi Mayo, Steamed Pork & Chicken Dim Sums w/Plum Sauce and Vegetarian Curry Puffs w/ Mint-Yoghurt.

Main dishes were presented in a buffet, with many selections to choose from. Guests feasted on: Chicken Rujak, Drunken Prawns, Beef Massaman  Curry,  Vegetarian Phanang Curry, accompanied with Steamed Rice and Indonesian Fried Rice.

What a splendid event for a beautiful couple. It was a pleasure to cater for the wedding reception, and even greater to have made a friendship along the way. We would like to thank John & Kaye, and wish them both all the very best of love and lifelong happiness!

 

Happy 18th Birthday Tom!

Fig & Lime Catering Tom's 18th - Odette

It was a brilliant birthday for Tom who turned 18 over the weekend. Man of the moment, Tom gathered with 50 of his closest friends at home, and rightly so,  for a lavish night of celebration in North Turramurra. Fig & Lime Catering were on-hand to serve up a treat no less with a host of dishes from our Package B (On-Site Catering) menu. We started off the night with Fresh Prawn Spring Rolls & our in-house Sauce, Chicken Money Bags, Crispy Fried Japanese Ebi Prawns, Chicken Meat Balls Glazed in a Sticky & Sweet Sauce, Seafood Spring Rolls, followed by Chicken Sate, before finishing off the night with Pulled Beef Sliders.

The night would not have become a great success without the flawless event management & event styling artistry by Odette of ODM Designs. Odette did a fabulous job in organising the event from start to close, creating a sleek appeal in her approach to design.  A surprise superhero theme brought much excitement and buzz in the air, which set the tone for the night of Sean’s 30th Birthday. As Sean once surprised Sarah for her 30th birthday, this time around Sarah did the same for Sean . Sarah approached us for catering and we were very excited to again be part of an amazing event.

Guests noshed on yummy delectables from Fig & Lime Catering’s Package B – Menu 2 selections: Spring Rolls, Curry Puffs, Dumplings, Dim Sums, Chicken Sate, Peking Duck, Thai Beef Sliders along with Pad Sew Ew and Pad Kee Mao mini noodle boxes.

A great night was certainly had!

Happy Birthday Sonia!

It was a delight to cater for Sonia’s big birthday bash on Saturday evening. A milestone birthday celebration that was truly the picture of happiness and fun. Party guests mingled and danced away in their costume attire as they blended in with the dress-up party theme. They also indulged on dishes from our Package B – Menu 1 range with: Vegetarian Curry Puffs, Fish Cakes, Lamb Kofta Meat Balls, Prawn Hargow Dumplings, Peking Duck Rolls and also Chicken Basil Stir Fry served in our mini noodle boxes. Pleased to say everyone had a good night and enjoyed the food!
